Most mornings in our house are pretty busy trying to get everyone up, dressed, fed and out the door. One of our favorite morning go-to breakfast foods are Egg Muffins. They are super easy to make and last us all week. These egg muffins can be stored in the refrigerator for up to 4 days. Warm them up in the microwave for 30 seconds and you're ready to eat. Pair an egg muffin with a sausage link, slice of bacon, fruit, or hashbrowns for a hearty breakfast. In a pinch make them a hand-held breakfast - you can eat them on the way to the bus stop or in the car on the way to work. Egg muffins are also great for a brunch get-together!
