Celebrate National Peanut Butter Day with Peanut Butter Crack!

January 24th is National Peanut Butter Day! 

To celebrate I want to share a recipe that I’ve been making for my mom for many years now. I make this for her every Christmas and sometimes throughout the year. It’s a simple treat that kids can help make! Here’s how to make a delicious Peanut Butter Crack.

Peanut Butter Chocolate Crack

Ingredients:

30-45 saltine crackers (about 1 sleeve depending on the size of your cookie sheet) 

1 cup of butter 

1 cup brown sugar 

1 cup semisweet chocolate chips

¾ cup of peanut butter chips

Directions:

  1. Preheat the oven to 350 degrees. Line a lipped cookie sheet with parchment paper and then spray the parchment paper. 
  2. Cover the entire cookie sheet in one layer of saltine crackers. In order to do this, you might need to break some in half to fill in all of the spots. 
  3. In a medium saucepan, melt your butter. After it is melted, add the brown sugar, stir, and then bring it to a boil for three minutes while stirring constantly
  4. Pour this mixture over the saltine crackers. Try to get every cracker covered, using a spatula to spread out if necessary. 
  5. Bake for 4 minutes or until bubbling. Remove from oven and then sprinkle chocolate chips on top. Distribute them fairly evenly across the whole sheet. Return to oven for 2 minutes or until chocolate chips are melted. 
  6. With a spatula spread the melted chocolate chips so that they cover all of the crackers. Then sprinkle the peanut butter chips around. Pop back in the oven for 1 minute so that the peanut butter chips melt and then with a fork you can marble the chocolate and peanut butter. 
  7. Allow to set at room temperature or in the freezer for 30 minutes. Remove from parchment paper and break apart into pieces. 

Tip: If you don’t think you’ll be able to finish the amount you’ve made, you can always put some in the freezer for another day!
