National Chocolate Cupcake Day!

October 18th: there's no better way to celebrate than by making chocolate cupcakes from scratch!

Which will you make - Milk Chocolate or White Chocolate?  We made both!



Milk Chocolate Cupcakes: 

        Ingredients: 

                Cupcake: 

  • 1 cup of flour 
  • 1 cup of sugar 
  • 6 tbsp Hershey’s Cocoa Powder (or special dark cocoa powder if you prefer dark chocolate) 
  • 1 tsp baking soda 
  • ½ tsp salt 
  • 1 large egg
  • ½ cup buttermilk 
  • ½ cup vegetable oil 
  • ¾ tsp vanilla extract
  • ½ cup hot water 

                Frosting: 

  • 1¼ cup unsalted butter. Room temperature
  • 12 oz semi sweet chocolate chips, melted
  • 3 tbsp Hershey’s Cocoa powder 
  • 5 cups of powdered sugar
  • Pinch of salt 
  • 4-5 tbsp heavy whipping cream

                                Or 

  • 1 can of chocolate frosting :) 

        Instructions: 

  1. Preheat oven to 300 degrees F and prep a cupcake pan with liners
  2. Add the dry ingredients to a large bowl, mix, and set aside
  3. Combine the egg, buttermilk, vegetable oil, and vanilla in another bowl and mix 
  4. Add the wet ingredients to the dry ingredients and mix 
  5. Add the water to the batter and mix (It will be runny, so don’t worry) 
  6. Fill the liners halfway and bake 18-23 minutes or until toothpick comes out clean 
  7. Remove the cupcakes from the oven and let them cool
  8. To make the frosting beat the butter in a large bowl until smooth 
  9. Add the melted chocolate and mix 
  10. Add half the powdered sugar add 2 tbsp of heavy cream and mix until combined 
  11. Add the rest of the powdered sugar and salt and then mix until your frosting is the correct consistency (more cream to make it softer, more sugar to make it stiffer) 
  12. Frost and decorate the cupcakes and enjoy! 




White Chocolate Cupcakes: 

        Ingredients: 

                Cupcake: 

  • ½ cup butter, room temperature
  • 1 cup white sugar 
  • 2 eggs, room temperature
  • 1½ cups flour 
  • 1 ½ tsp baking powder
  • ½ cup hot water
  • ⅓ cup milk  

                 Frosting: 

  • 1 cup butter, room temperature
  • 4 cups powdered icing sugar 
  • ½ cup white chocolate chips, melted 
  • 1 tsp vanilla extract
  • 2 tbsp milk

                                Or 

  • 1 can of vanilla frosting :) 

        Instructions: 

  1. Preheat oven to 350 degrees and line cupcake pan with liners 
  2. Combine the butter and sugar in a large bowl until light and fluffy
  3. Add in the eggs and beat until combined
  4. In a small bowl add all the dry ingredients and mix
  5. Add the dry ingredients to the wet and mix 
  6. Add the hot water and milk and mix until combined
  7. Fill the liners half way and bake for 18-23 minutes, or until toothpick comes out clean 
  8. Remove the cupcakes from the oven and let them cool
  9. To make the frosting combine the butter and icing sugar in a large bowl until soft 
  10. Add the melted white chocolate, vanilla extract, and cream and mix until combined and you have the correct frosting consistency (more cream to make it softer, more sugar to make it stiffer) 
  11. Frost and decorate your cupcakes and enjoy!
