RECIPE: Zucchini Bread

Delicious way to get your veggies!

This may not look nor sound like your typical type of bread, but trust me, it is delicious! (and a great way to get kids to eat their vegetables!) 


Ingredients 

  • 3 cups all purpose flour 
  • 1 tsp. Salt
  • 1 tsp baking soda 
  • 1 tsp baking powder 
  • 1 tbl. Ground cinnamon 
  • 3 eggs 
  • 1 cup vegetable oil 
  • 2 ¼ cup white sugar 
  • 3 tsp. Vanilla extract 
  • 2 cups grated zucchini 
  • 1 cup chopped walnuts (optional) 


Directions: 

  1. Preheat the oven to 325℉.
  2. Grease and flour two 8x4 inch pans. 
  3. Sift flour, salt, baking powder, baking soda, and cinnamon together in a bowl. 
  4. Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. 
  5. Stir in zucchini and nuts until well combined. 
  6. Pour batter into prepared pans. 
  7. Bake for 40 to 60 minutes, or until the tester inserted in the center comes out clean.
  8. Cool in a pan on the rack for 20 minutes. Remove bread from the pan and completely cool.
