Summer Salsa Chicken

The Perfect Father's Day Dinner!

Looking for an easy Father’s day grilling dinner? Summer salsa chicken is a simple grilled chicken recipe that is light and perfect for the summer time! It’s easy to make and delicious with a fruity sweetness that kids and parents alike will love. 


Prep time: 20 minutes, plus 3 hours in the refrigerator

Cook Time: 10-15 minutes


Ingredients:

1lb boneless chicken breasts (for larger chicken breasts, cut in half)

Marinade:

1 tsp minced garlic or garlic powder 

2 tbsp finely diced onion

½ tsp salt

½ tsp cayenne

2 tsp chili powder

½ tsp cumin 

Zest of 1 lime

¼ cup lime juice (about 2 limes)

¼ cup vegetable oil

2 tbsp water

1 tbsp honey

Salsa:

⅓ cup peaches 

⅓ cup pineapple

⅓ cup mango 

(peaches, pineapples, and mangos can be substituted with 1 can of tropical fruit)

2 tbsp red onion

10 oz can diced tomatoes with green chilies 

½ tsp lime juice

Pinch of salt

Pinch of pepper 


Directions:

Chicken: 

1. Combine all marinade ingredients together and mix well.

2. Pour marinade over chicken in a plastic bag or container and then refrigerate for 3 hours.

3. Remove chicken from bag and dispose of marinade. 

3. Grill chicken for 10 to 15 minutes (internal temperature of 160 degrees)


Salsa:

1. Finely dice all fruit and onions 


2. Drain tomatoes and add to fruit and onion mixture


3. After the fruit, tomatoes, and onions are all combined add in salt, pepper and lime juice 


4. Chill in refrigerator for 2 hours 


5. Serve on top or on the side of the chicken. It also goes well as a snack with some tortilla chips.
