Tired of the same old turkey leftovers? This is one of our family staples every year since I was in high school. My mom shreds up all of the leftover turkey, we get some nice soft rolls and enjoy this the next day! Quick and easy, and really yummy. These sandwiches are a crowd pleaser!
Ingredients:
1 Tbsp. vegetable oil
1 small red onion, chopped
1 stalk celery, trimmed and chopped finely
3 c. cooked turkey (preferably dark meat), cut into large chunks
2 Tbsp. firmly packed brown sugar
2 tsp. worcestershire sauce
¼ c. ketchup
1 (8 oz.) can tomato sauce
1 Tbsp. cider vinegar
¼ tsp. chili powder
1 tsp. dijon style mustard
1/8 tsp. salt
Directions:
Heat oil in large skillet over medium-high heat. Add onion and celery; cook and stir 5 minutes. Stir in the rest of the ingredients. Cover and simmer 45 minutes to 1 hour or until all the turkey shreds easily when pulled with a fork. Serve on hamburger buns. Enjoy!
