Love it or hate it, candy corn is everywhere this time of year. We have two great easy and affordable treats for your family to use up that candy corn you are tired of eating!
This first easy recipe transforms candy corn into Butterfingers Fudge. You've been warned...this is addictive! I usually bring half into the office and keep half in the freezer for a sweet treat in the evenings.
Ingredients
- 3 cups candy corn (about one bag)
- 1 cup peanut butter (I use creamy)
- 1 can sweetened condensed milk
- 2 cups white chocolate chipsĀ
- Milk Chocolate chips, crushed Butterfingers, Reese's Pieces (Optional)
Instructions
- Line a 9x9 pan with parchment paper and spray with cooking spray. Add candy corn and peanut butter to a medium sized pan, heat over low heat stirring frequently until candy corn has melted, about 3 minutes.
- Add sweetened condensed milk, and bring to simmer.
- Add white chocolate chips, and stir until melted.
- Pour and spread evenly into pan.
- After a few minutes of cooling, add any toppings you like (chocolate chips, butterfingers, peanut butter cups, etc.) (Optional)
- Chill in fridge overnight.
- ENJOY!
------------------------------------------------------------
I will admit it, I am not the biggest candy corn fan. At one time I loved the stuff, but maybe I had too many handfuls of it as a child! Anyways, when I decided to make a recipe with candy corn my 10 year old was thrilled, me not so much! We bought a bag of fresh candy corn on our weekly trip to Target (I canāt be the only one that goes there weekly?!). I starred at that bag sitting on the counter for the next 4 days wondering what I could do with it. I looked at different recipes on the web with little ideas of something that looked good that uses candy corn and was fairly easy to make. Finally, I came across a recipe on Pinterest that looked like it might be good. I was able to pick up all the items in the baking section when I ran into the grocery store Saturday morning. It was fairly easy to make, gave my girls something to help me with, and made a big tray of it that was perfect to take for an event we were attending that evening. Letās just say when I pulled it out of the oven, my final result did not look like that picture I saw on the recipe at all. But Iāve always learned not to judge a book by its cover and believe me this was one of those times! I was amazed at how good this came out and it really seemed to be a hit at the party! I think it will be one of my āgo toā fall desserts for now on! It was easy to make and tasted good! Score for me!
Ingredients
- 1 1/5 c. graham cracker crumbs (my girls had a blast demolishing into crumbs a whole sleeve of graham crackers in a plastic bag!)
- Ā½ c. of melted butter
- 1 bag of peanut butter and chocolate chips (I actually didnāt realize that the bag I picked up had both so I ended up not even needing the plain chocolate chips)
- 2 c. of sweetened coconut
- 2 c. of fresh candy corn
- 1 can (14 oz) of sweetened condensed milk
Instructions
- āPreheat the oven to 350 degrees and grease a 13āx9ā pan. I just used my normal vegetable oil spray.
- Ā Mixing the butter with the graham cracker crumbs, form a ācrustā in the bottom of the pan. Iāll be honest, this took some effort squishing to make sure that the whole bottom was covered.
- Sprinkle the chocolate and peanut butter chips on top of the graham cracker crust
- Sprinkle the coconut on top to form the next layer
- Sprinkle the candy corn on top
- Ā Pour the sweetened condensed milk all over the top as evenly as possible.
- Put in the oven for 20-25 minutes to bake. You want the edges to slightly brown.
- Let cool completely a cut into bars and enjoy!
Lessons Learned
As with everything I do, I like to reflect on things that worked out well and things that I may do differently next time. I loved that I found the peanut butter and chocolate chips together. I read that if you cannot find peanut butter chips then you can substitute butterscotch chips instead. Also the recipe called for white chocolate chips instead of milk chocolate. I am not the biggest fan of white chocolate so I substituted the regular chocolate instead. Depending on what you like, you can definitely play around with this recipe! Like I mentioned before, the recipe didnāt look like the picture had, especially the candy corn. For some reason mine melted, where the recipe stayed in shape. I am not sure what happened because I followed the directions and the cooking time. I do think mine tasted amazing, so I will continue to keep letting the candy corn melt, but if you want them to be a bit more solid then maybe cook it for the 20 minutes instead of the 25 minutes. Also remember my very important advice, donāt judge it by how it looks because it really does taste good! You will be missing out if you donāt give it a try!
