Mountain Bike Soup

A perfect soup to set and forget as you go mountain biking!

Ingredients:

32 oz organic bone broth
30 oz organic canned green beans
2 cups V8 juice
4 oz nitrate-free pepperoni
8 oz high protein pasta (like chickpea, lentil or black bean pasta)

Directions:

  1. Combine all ingredients except pasta in a slow cooker set  on low for 2-4 hours. 
  2. Go out and be active with your kids!
  3. Turn the slow cooker to high and put in pasta for the last 20-30 minutes. 
  4. Enjoy a quick fix, healthy dinner!

Tips & Tricks:

Bone broth is rich in minerals that support the immune system and contains healing compounds like collagen, glutamine, glycine and proline. The collagen in bone broth heals your gut lining and reduces intestinal inflammation. Buying organic is best to steer clear of potentially harmful raising and processing.

Using organic green beans helps reduce the amount of pesticides your family consumes, are more nutrient dense, and helps support better environmental practices.

V8 contains 2 servings of vegetables per cup

Buying pepperoni that is nitrate-free, free of anti-biotics, free of added hormones, and humanely raised is best for your family’s health and the environment.

Pasta made from chickpeas has 25g of protein and 13g of fiber per serving!
