Slow Cooker Stuffed Peppers

Do you have any suggestions for healthy, quick recipes for my family for dinner? I get this question all the time as a trainer from my clients. One of the best options for quick dinners is using your slow cooker. Unfortunately, many recipes have high content of unhealthy sauces, carbohydrates, and use already highly processed foods. Here's a healthy recipe to make for your family that is quick and ready in the evening so that you can just enjoy without the cooking at night.


Ingredients:
5 medium peppers
1 lb lean ground turkey
1 cup chopped onion
2 1/2 tsp dried Italian Seasoning
2 cloves garlic minced
1/2 tsp salt
1 cup rice or quinoa
1 jar pasta sauce
1/2 cup water

Directions
1. Cut off tops of peppers. Clean out completely and discard seeds. Please peppers upright in a 4 to 6 quart slow cooker.
2. Combine ground turkey, onion, Italian seasoning, garlic, and salt. Stir in rice. Spoon into peppers.
3. Poor most of pasta sauce over peppers. Add water to remaining sauce in jar. Covered jar and shake. Pour over peppers.
4. Cover and cook on low heat setting for six hours or on high heat setting for four hours.
5. Transfer papers to serving plates. Spoon sauce over top. Let stand for five minutes before serving. Enjoy!
